Alisa’s Caramel Popcorn

My friend Alisa Clarck made this a while back and brought it in to work. It was so freaking delicious that I asked her for the recipe. It makes a lot. Great for Halloween time.


3/4 Cups unpopped popcorn (6 quarts popped)
2 cups of brown sugar
1/2 cup corn syrup
1 teaspoon of salt
1 teaspoon Vanilla
1/2 teaspoon baking soda

Bring to boil sugar, corn syrup and salt in pan stirring constantly. Once mixture is brought to a boil, let boil without stirring for 5 minutes. Remove from heat and add vanilla and baking soda. The baking soda makes it expand like crazy so make sure you use a larger pot. Mix into popcorn spread on to baking sheet and bake in 250 degree oven for 1 hour stirring every 15 minutes
