When we were dating Ashley made this recipe for me. Each time she makes it it changes. Sometimes she makes FAR too much, but we always end up eating it all.
1 Pkg Jenny-o Sweet Turkey Sausage
1 Yellow Squash
2 Large Carrots
3 Tbsp Butter
3 Tbsp Corn Starch or Flour
1 to 2 Cups Water or Chicken Broth
3 Cups Quinoa, prepared
Sautee veggies in olive oil in a large pan. Season with your favorite seasonings. Add the sausage. Crumble the sausage so it is no longer in the casing. Add the water or chicken broth. Add the butter and let it melt. Mix the cornstarch with just enough water or broth to make it liquidy and stir it in. Serve over the prepared quinoa.
