I love Mexican food. I am always looking for and creating my own recipes. This is a simple and tasty treat that I created one night when ingredients were scarce. For my diet (slow carb diet) I eat this on a regular basis on top of lettuce or just by itself. It is also AMAZING with some steak strips.
1 Red Bell Pepper, cut in strips
1 Green Bell Pepper, cut in strips
1 Onion, cut in strips
1 Lb Chicken, cut in strips
2-3 tsp Ground Cumin
2-3 tsp Garlic Powder
Salt and Pepper to taste
1-2 tsp Chili Powder
1 Jar Salsa
1 Can Black Beans, rinsed and drained
In 2 tbsp olive oil, sautée peppers and onion until mostly translucent. Add chicken. Season to taste. Let the chicken cook for 5 minutes or until there is no more visible pink. (Don’t worry, it is not raw. The residual heat in the pan and veggies will cook it the rest of the way.) Add beans and salsa and mix thoroughly. Serve over salad or in a tortilla.
