Gluten Free Waffles

 
Last July Ashley was diagnosed with Celiac’s disease. Since then we’ve had to make some major lifestyle changes. Some foods we had to cut out entirely. We’ve been finding recipes we like and modifying them to our tastes. This is one such recipe (and the only GF waffle recipe I’ll eat). Enjoy!

Gluten Free Waffles

Ingredients
  1. 1/3 Cup Banana Flour
  2. 1/3 Cup Rice Flour
  3. 2 Tbsp Corn Starch
  4. 1 tsp Baking Powder
  5. 1/2 tsp Baking Soda
  6. 1/8 tsp Xanthum Gum
  7. 1 Tbsp Sugar
  8. 1/2 tsp Salt
  9. 1 Cup Buttermilk
  10. 2 Tbsp Oil
  11. 1/2 tsp Vanilla
  12. 1 Egg
Instructions
  1. Combine all of the dry ingredients in a medium sized bowl and mix together.
  2. Combine wet ingredients in separate bowl and mix together.
  3. Combine the wet and dry ingredients together.
  4. Cook in your waffle iron to your desired consistency.
Notes
  1. It's easy to add fruits to this. We love fresh blueberries. Top it with organic maple syrup and you've got yourself a breakfast!
